Simaruba is the only rooftop bar and restaurant in San José del Cabo's Historic Centre, occupying Plaza Atrium on Blvd. Mijares just steps from the Art Walk. Named for the Simaruba tree that stands at the heart of its terrace, the venue won Best Bar in San José del Cabo at the 2023 Culinary Awards and is part of Mexico's Top 100 Bars. The kitchen celebrates Baja California's coastal bounty through contemporary Mexican techniques: tuna tartare with tamarind ponzu, sashimi de camarón with passion fruit ponzu and puffed rice, almeja chocolata with Oaxacan chorizo, chamorro de cerdo al tamarindo, and wagyu beef tartare with bone marrow and Paris butter. The cocktail program is signature and innovative — the 'Grape Salad' and a curated margarita menu are highlights.
